The top-secret family recipe from the house of Caduff in the beautiful Val Lumnezia is the starting point for this Grisons specialty. The professional hands of the team around Anton Meli of "La Culina" in Bad Ragaz wrap every single chard leaf in pure handwork and exclusively with the best ingredients. 

Ingredients
Chard, durum wheat, low-fat curd cheese, vegetables 36%.
(carrots, zucchini, corn, celery), whole egg, water, salt, herbs 1%.

Preparation

  • Put the capuns, frozen or already defrosted, in a single layer in a baking dish.
  • Bring 3dl of milk, 1 tablespoon of cornflour and 1 bouillon cube to a slow boil in a small pan, stirring constantly.
  • Pour the sauce over the capuns. They should be just covered. If not, top up with a little milk.
  • Sprinkle grated cheese on top if desired. Bake in the middle of the oven at 200°C (convection oven 180°C) for about 30 minutes until golden brown.
