The top-secret family recipe from the house of Caduff in the beautiful Val Lumnezia is the starting point for this Grisons specialty. The professional hands of the team around Anton Meli of "La Culina" in Bad Ragaz wrap every single chard leaf in pure handwork and exclusively with the best ingredients. For the classic capuns, for example, Dinnair has its own salsiz made from local organic meat (without nitrite) at the Mark butchery in Schiers GR.

Chard, durum wheat, low-fat cottage cheese, salsiz from beef and pork, whole egg, water, chives, parsley, salt.

Preparation (2 people)

  • Place the capuns, frozen or already thawed, in a single layer in a baking dish.
  • Bring 3dl milk, 1 tablespoon cornflour and 1 bouillon cube slowly to the boil in a small pan, stirring constantly.
  • Pour the sauce over the capuns. They should be just covered. If not, top up with a little milk.
  • Sprinkle grated cheese on top if desired. Bake in the middle of the oven at 200°C (convection oven 180°C) for about 30 minutes until golden brown.
